Hasselback potatoes

I'm working on my paper today and have almost no food at home. But I did have a lone (large) potato. What to do with a potato??

Well I saw this episode on the food network a while ago where small potatoes were sliced, but not all the way through, and garlic was placed between the slices. The potatoes were tossed in olive oil + melted butter and baked. I had everything I needed so Hasselback potatoes it would be!

Veronica still has my camera from my b-day but luckily Stacey was home with her camera. So the post this week has a guest photographer. She's amazing!

I kinda followed the recipe as written, except not that much. I used two whole cloves for one really large potato. I sliced the garlic thin and put at least one piece between each slice. Then I stuffed a little bit of butter in each slice, drizzled with olive oil, and baked at 400 degrees for over an hour. It wasn't 100% done so I think the recipe is really best with smaller potatoes. And it was pretty garlicky but I wouldn't have minded more :)

  1. I'd like to try it with a sweet potato, and sprinkle some cinnamon in between the slices.
